As you might expect, it's difficult to give feedback without actually having an understanding of your background and experiences, but basically, if you haven't done anything consulting related, then try to emphasise ‘consulting-like skills’ in your previous roles. 

Additionally, emphasise anything that has to do with being entrepreneurial / taking initiative. 

Last but not least, aim to quatify your efforts as much as possible into business terms, e.g., # of patients helped. 

If you're committed to making this transition into consulting, I'd recommend to do a proper CV review. This increases your chances of passing screening dramatically, especially if you don't have the typical background.

First, I recommend you try to get some experiential/pro bono consulting experience (programs like Impact Consulting, 180 Degrees, GCG, etc.)

Secondly, any existing experiences you essentially need to find the business “spin” so to speak for them.

You don't necessarily need consulting and business experience, though of course it does help.

Regarding your resume, just make sure it is written in a way that's suited for consulting recruiting (emphasizing strong brand names, quantifying your achievements, highlighting qualities such as leadership, teamwork, and initiative, etc.).

Regarding making it clear why you want to do consulting, I would do the following: spend some time preparing and workshopping a strong answer, put it into your cover letter, and be sure to talk about it in the interview too. You are right in that this is going to be important for you given your background.
