Do any of the MBB offices in South/Central America offer visa sponsorship for students applying to junior-year internships? There are no MBB offices in my country and I'm looking to get one of those on my CV before graduating. Funnily enough I have US/EU passports but from what I understand the US offices won't take you unless you live there.

From what I’ve seen, the US offices will consider you if you already have the legal right to work there (e.g., US work visa H-1B, L1 or OPT; Green Card, etc), but they recruit most heavily from US Undergrad and MBA programs. That said, I know first hand of EU passport holders who secured an H-1B visa from abroad and got offers. It’s not impossible at all, just less common for internships.
On the LatAm question, I also personally know dozens of MBB consultants with US, EU, and some LatAm passports (e.g., Argentina, Colombia) working in Mexico, Chile, and Brazil. So while visa sponsorship for internships may not be widespread as you suggest, it’s honestly possible to work there without being a citizen of that specific country, especially for full-time roles.
If you have a good CV and know Spanish/Portuguese, I would apply and network directly with recruiters / partners in your target offices. Good luck!
These things change rather quickly, and they are rarely set in stone. Oftentimes, they can be negotiable.
In short, reach out directly to the MBB offices you are targeting and just ask if they offer visa support and what is required for it.
Then, regardless of good or bad news, you can at least advance with certainty.
