How easy is it to switch between Monitor Deloitte & Deloitte S&O? Assume I am employed as a Monitor Deloitte hire and I come across a pretty interesting implementation case in S&O, can I easy apply to that job? Thanks.

Firstly, Monitor Deloitte sits within Deloitte S&O as the "Strategy" in Strategy in Operations, so depending on the case it could fully sit within your remit.
Secondly, from what I've heard (I asked these questions when I was deciding whether to take Monitor's offer), hiring you into "Monitor" doesn't restrict you to strategy work. You have a fair amount of flexibility in the projects you undertake.
