I don't have visibility over the Italian office per se. But ADL's UAE office follows a pretty standarised interviewing process - every interview testing both case and fit questions. Also, I have only heard positive things about their process and work culture - nothing explicitly negative or different from other consulting firms.
I'm sure you already know this, but it might be worth networking with a few consultants on LinkedIn from ADL's Italian office. Maybe you could also ask HR to connect you with 1-2 consultants from your local office who could share some of their experiences with you.

It's probably better if you share the specific office. Usually the smaller the firm, the higher the level of authonomy of each office in the recruitment process.
