Sydney based (GMT+10), Preferable slots (start time): Weekdays 1800-2100; Weekends 0800-2100

I have been suggested by a few consultants in Sydney office to ensure I prepare multiple stories for mentoring and coaching. I am unclear what should be stream of stories I need to target. Some of the examples I can think of are:

1. Managing and coaching upwards if something is a great idea or not a great idea?

2. Teach someone how to get better at a particular thing, like PM, use a software well, etc?

3. Mentoring someone and see them grow as an individual?

Or others.

Of the above, my concern is stream 3 might be what's more relevant, but is probably not as impactful.

I agree. #2 is probably the most actionable and relevant, with #1 a close second. Long term, #3 is great but your manager or principal cares about what you can do for them today, not in 3 years..
