Is it fine to ask an additional clarifying q once you start structuring, if you forgot to ask about a certain aspect?

Absolutely! If it will help you shore up/focus your framework. Now, I'd say you you get 1 of these in a given interview, and you need to make sure it's "smooth". I.e. "Quick question, I just thought of this: [Insert Question]"
