Can a great interview make up for an average CV?

I don’t have a bad profile, but it’s also not outstanding. My grades are solid but not top-tier, I come from a semi-target university, and my internships are relevant but not at big-name firms. If I get invited to interviews, can a strong performance still make up for that, or will my CV continue to hold me back?

If you get invited to interviews, there is a base line expectation that you can do the job. So yes, interview performance outweighs CV (to a certain extent). Humans are humans and a CV conveys a certain message in itself. It might become complicated if your performance in the interviews (in a good way) differs too much from your CV, i.e. people will ask themselves and then you what is going on.
