I have been practice cases for about 2-3 weeks now. Sometimes I am satisfied with how my preparation is going and sometimes I feel completely out of my depth. So, what are the main areas I should focus on, to gain confidence?

Honestly, it's impossible to tell what you should focus on without seeing you in a live case.
And also, unless you are applying for a specialist position and the recruiter mentioned that you're likely to be tested on cases from a specific industry, the case in the interview can be on any topic.
What I would recommned you do is take a step back and figure out what are the 2-3 points of feedback you tended to receive from peer sessions or from past interviews. They should give you a sense of what are the biggest things to double down on.
