Securing an internship typically comes down to three things:
The interview process usually consists of 2-4 interviews, each of them inclusing a fit/behavioral component and one business case.
One additional consideration: given the current regional situation, Beirut may not be the best office to target for recruiting. It could be worth exploring opportunities in larger Middle East offices as well, depending on your profile and flexibility.

The biggest help in the region is connections; message consultants on LinkedIn, especially engineers or people from your uni, and ask for a quick chat or referral. Your engineering background is a real plus, so use it.
The process: First they check your CV, then you do case interviews (usually 2 rounds) plus some "why consulting" questions.
