why do some partners do the fit portion prior to the case and others after? Is it to avoid bias or to quickly figure out whether they are even seriously considering the candidate? What can an interviewer gain from either method?

It literally means nothing.
People are people. They do what they want to do.
That's why you should never expect anything. The interviewer will do what they please (long fit or short fit, or maybe no fit. Tough case, easy case, “nice” style, “tough” style)
Don't read into anything!
Just remember your training in the fundamentals, ignore the noise, and you'll succeed.

Please don't read too much into this. As a previous interviewer at BCG, this is often just personal preference.
If it is anything, assuming they give the case first it is less about bias but more about making sure they evaluate you on the more important part (case) in case they run out of time. However a good interviewer should also manage the time well so that there is enough time for both fit and case.
Firms give general guidelines on how the interview should be conducted. Partners especially don't always follow this. But the interviewer does not ‘gain’ anything from either method IMO.
What should matter to you as a candidate is being able to demonstrate the right skills for whatever that is ‘thrown’ at you during the interview.

different people, different interviewer styles. In most cases there is no methodical reason for this, so would not interpret too much into it. Also, it frankly doesn't matter.

It's just a variation in their style.
I wouldn't read into it.
Most interviewers do it according to the standard practice which is personal fit first then case.
But get ready to expect anything.
