I'm thinking this can be broken into the following issue tree (high-level):

Step 1: Total number of salmons sold in a year x avg. price of a salmon

Step 2: (calculating the number of salmons sold): # consumers x avg. consumption of salmons in a year 

Step 3 (calculating the consumers): World population x penetration rate 

Step 4 (avg. consumption calculation): Avg. fish consumption  x percentage of the average fish consumption is salmons 

Step 5 (Avg. fish consumption): Divide into frequent, less frequent and non-fish eaters to find the average
