Hi Megan,
Typicall cases will be to optimize org structure (decrease or incease number of verticals, optimize spans of control, align KPIs with org structure), to redesign motivation schemes (e.g. see if KPIs support right behaviors and attitudes), and to optimize headcount cost.
Check Ross MBA case books. They have a number of such cases.
