Hi,
To answer your question: it depends on the employer. Some summer internships are aimed at penultimate-year undergraduates, but some firms also accept MSc students, including those on one-year programmes.
My suggested approach is to check the eligibility criteria for each programme by contacting the HR team of your target company/office directly for clarification.
Best,

Hi, I just wanted to know whether one-year MSc students are eligible to apply for summer internship programmes, or if they are only open to penultimate year undergraduate students only e.g., EY, PWC etc...
Hi, the short answer is that it depends on the firm, location, and on when exactly you graduate rather than on the "MSc" label itself.
Generally speaking, summer internships are usually built for penultimate-year students, because the firm's goal is to convert you into a graduate offer that you take up once you finish your degree. A one-year MSc often does not fit that model, since you typically graduate around the same time as the internship and have no year left to come back to. That said, there are some exceptions driven by firm / location / program end date specificities.
The best move is to shortlist your target firms, check each one's local policies, and if in doubt ask the recruiter directly.
Hope it helps. Feel free to drop me a message if anything is unclear.
